Ingredients
- Sunflower Oil for greasing the muffin tray, 3 large eggs, 2 tbsp of milk, 40g matured cheddar cheese (grated), 1 tomato deseeded and finely chopped, 3 spring onions finely choppped, 100g cooked cold potatoes, 2 tbsp fresh basil (chopped), 2 thick slices of ham (diced), salt and pepper for flavouring.
- You are welcome to substitutes:
- diced ham for diced chicken
- crumbled bacon
- grilled red peppers (diced)
- feta cheese
- Preheat the oven to 180 degrees centigrade
- Beat eggs and milk together in a bowl
- Stir in the remaining ingredients
- Spoon the mixture evenly between the muffin holes
- Bake for 15-25 minutes until set and risen
- Once risen, remove from the oven and leave it to cool before extracting muffins from the tray
