Ingredients
- Sunflower Oil for greasing the muffin tray
- 3 large eggs
- 2 tbsp of milk
- 40g matured cheddar cheese (grated)
- 1 tomato deseeded and finely chopped
- 3 spring onions finely choppped
- 100g cooked cold potatoes
- 2 tbsp fresh basil (chopped)
- 2 thick slices of ham (diced)
- salt and pepper for flavouring. You are welcome to substitutes: diced ham for diced chicken crumbled bacon grilled red peppers (diced) feta cheese
- Preheat the oven to 180 degrees centigradeÂ
- Beat eggs and milk together in a bowlÂ
- Stir in the remaining ingredients
- Spoon the mixture evenly between the muffin holesÂ
- Bake for 15-25 minutes until set and risen
- Once risen, remove from the oven and leave it to cool before extracting muffins from the tray Â
