  • Ingredients
    • Sunflower Oil for greasing the muffin tray
    • 3 large eggs
    • 2 tbsp of milk
    • 40g matured cheddar cheese (grated)
    • 1 tomato deseeded and finely chopped
    • 3 spring onions finely choppped
    • 100g cooked cold potatoes
    • 2 tbsp fresh basil (chopped)
    • 2 thick slices of ham (diced)
    • salt and pepper for flavouring. You are welcome to substitutes: diced ham for diced chicken crumbled bacon grilled red peppers (diced) feta cheese
  1. Preheat the oven to 180 degrees centigrade 
  2. Beat eggs and milk together in a bowl 
  3. Stir in the remaining ingredients
  4. Spoon the mixture evenly between the muffin holes 
  5. Bake for 15-25 minutes until set and risen
  6. Once risen, remove from the oven and leave it to cool before extracting muffins from the tray
